Ingredients
6 oz pork tenderloin
1 tablespoon butter
1 tablespoon oil
4 oz mushrooms
1 tablespoon onion
1 teaspoon garlic
1 tablespoon crumbled feta cheese
2 tablespoons cream
6 kalamata olives
Prep
Start oil, garlic, onions in sauté pan
Let oil get hot, put pork, and olives in pan
Sear pork on both sides, deglaze with red wine, let reduce and add more if needed
When pork and mushrooms are golden, add salt and pepper to taste
Add feta cheese and turn down heat to melt
Add cream to emulsify pan sauce, let reduce and serve hot
Beef, fish or scallops can be substituted for pork
