Ingredients
2 ea Japanese (or 1 regular) cucumbers, peeled, grated
¼ ea red onion, grated or minced
¼ cup honey
1 T red wine vinegar
1 T lemon juice
2 tsp kosher salt
1 cup greek yogurt
1 cup crème fraiche
1 tsp cardamom powder
Prep
If the cucumber is very wet, squeeze out some of the water. Combine all ingredients in a blender, except for yogurt and crème fraiche. Puree until smooth. Turn blender to low speed and add yogurt, crème fraiche. If it’s a little chunky, that’s fine. Add more salt if needed.
